Sheer Khurma

Preparation Time - 10 Min                            Cooking Time - 1 Hr                       Yield - 10 Serving

Ingredients:


Milk - 2 liter

Sevai - 1 Cup

Sugar - 1 Cup

Cashew - 1/4 Cup

Almonds - 1/4 Cup

Pistachio - 1/4 Cup

Cardamom powder - 1/4 Tsp

Dates - 7-8

Charoli - 2 Tbsp

Saffron - 8 strands

Ghee - 1 Tbsp

Method:


1) Soak almonds and pistachios in water for 30 mins and blanch them. 

2) Soak saffron in 1 tbsp of milk and keep aside.

3) Take milk in heavy bottom pan and keep to boil. 

4) Mean while cut cashew, almonds and pistachios in small slices and keep aside.

5) Remove seeds from dates and cut them in small pieces and soak in 1 tbsp of water.

6) Take pan and add 1/2 tbsp of ghee in it. 

7) Fry almonds, cashew and pistachio for 2-3 min. on low flame and keep aside.

8) In the same pan heat 1/2 tbsp of ghee and fry sevai on low flame till golden brown in color and keep aside.

9) When milk is reduced to 3/4 quantity add sugar and boil for 15 min. again.

10) In boiling milk add fried dry fruits, soaked dates, charoli and mix well.

10) Add sevai and mix well. 

11) Add cardamom powder, saffron milk and mix well. Switch off stove immediately.

12) Serve hot or cool as you like.
