Lemon Poppy Seed Muffins

Preparation Time - 7 Min                                   Cooking Time - 18 Min                         Yield - 6 Muffins

Ingredients:


All purpose flour - 1 Cup

Granulated sugar - 1/2 Cup

Poppy seeds - 2 Tsp

Salt - a pinch 

Baking soda - 1/4 Tsp

Baking powder - 1/4 Tsp

Butter - 1/4 Cup softened at room temp.

Vanilla extract - 1 Tsp

Yogurt - 1/2 cup 

Lemon zest - 1 Tsp

Method:


1) Preheat oven  to 375° F or 190° C.

2) In a bowl take butter and beat it well. Add sugar and beat well till soft and fluffy.

3) Add yogurt, vanilla extract and whisk it well. Add lemon zest and mix well.

4) In another bowl mix all purpose flour, salt, baking powder and baking soda.

5) Add poppy seeds to flour mixture and mix well and add butter mixture. Mix the ingredients lightly to a smooth batter.

6) Put paper liners to muffin pan and fill the batter.

    

7) Bake in preheated oven for 17-20 mins or toothpick inserted in the center comes out clean.




8) Let it cool for 15 min and then serve. You can decorate muffins before serving with lemon frosting.

Whole Wheat Apple Muffins

Preparation Time - 7 Min                            Cooking Time - 20 Min                       Yield - 8 Muffins

Ingredients:


Wheat flour - 1 Cup

Granulated sugar - 1/2 Cup

Packed brown sugar - 1/4 Cup

Salt - 1/4 Tsp

Baking powder - 1/2 Tsp

Baking soda - 1/2 Tsp

Cinnamon powder - 1 1/2 Tsp

Oil - 1/4 Cup

Milk - 1/4 Cup

Yogurt - 1/4 Cup

Vanilla extract - 1 Tsp

Apple - 1 

Method : 


1) Preheat oven  to 375° F or 190° C.

2) In a bowl mix milk, oil,vanilla extract and whisk it well.

3) In another bowl mix wheat flour, sugar, salt, baking powder and baking soda.

4) Add apple to flour mixture and mix well and add milk mixture. Mix the ingredients lightly to a smooth batter.


 


5) Put paper liners to muffin pan and put the batter.

6) Bake in preheated oven for 20-23 mins or toothpick inserted in the center comes out clean.

7) Let it cool for 15 min and then serve.

Chocolate Muffins

Preparation Time - 10 Min                         Cooking Time - 20 Min                    

This recipe makes 9 standard size muffins.

Ingredients:


All purpose flour - 1 Cup

Granulated sugar - 1/2 Cup

Chocolate chips - 1/2 Cup

Unsweetened cocoa powder - 3 Tbsp

Baking soda - 1/4 Tsp

Baking powder - 1 Tsp

Salt - 1/2 Tsp

Yogurt - 1/2 Cup

Milk - 1/4 Cup

Pure vanilla extract - 1/2 Tsp

Water - 1 Tbsp

Oil - 1/4 Cup

Method:


1) Preheat oven  to 375° F or 190° C.

2) In a bowl mix yogurt, oil,vanilla extract,water and milk whisk it well.


   
3) In another bowl mix all purpose flour, cocoa powder, sugar, salt, baking powder and baking soda.
    Tip : If you sieve the dry mixture(except sugar) for 2-3 times ingredients mix together very well.
            Do not pack down the flour in measuring cup. First loosen your flour with a spoon and then fill in measuring cup.



4) Add chocolate chips to flour mixture and mix well and add milk mixture. Mix the ingredients lightly to a smooth batter.
    Tip : Do not over mix, muffins may become hard.

5) Put paper liners to muffin pan and put the batter.
     Tip: Fill only 1/2 or 3/4 of muffin cup with batter.

6) Bake in preheated oven for 16-20 mins or toothpick inserted in the center comes out clean.



7) Let it cool for 15 min and then serve. You can decorate muffins before serving with chocolate frosting.

Eggless Custard Powder Cookies

Preparation Time - 7 Min                  Cooking Time - 15 Min                 Yield - 15 Cookies

Ingredients :


All purpose flour - 1/4 Cup

Powdered sugar - 3 Tbsp

Custard Powder -  3 Tbsp

Cardamom powder - a pinch (Optional)

Butter - 1/4 Cup or 1/2 Stick

Milk - 1 Tbsp

Method:


1) Preheat oven to 375° F or 190° C.

2) Take butter in a bowl and beat for 1 min until fluffy.

3) Add powdered sugar and beat again for a min.

4) Add milk and mix well.

5) Add all purpose flour, custard powder and cardamom powder and mix well to form a dough.



6) Make small balls of mixture, roll in granulated sugar and put on a greased sheet.



7) Bake for 13- 15 min in preheated oven.

8) Cool for 10 min and transfer to wired rack. Cool for another 20 min. and serve.

Eggless GingerSnaps


Preparation Time - 30 Min                         Cooking Time - 15 Min        

This simple recipe makes 22-25 gingersnap cookies.

Ingredients:


All purpose flour - 1 Cup

Brown Sugar - 1/2 Cup

Ground cinnamon - 3/4 Tsp

Ground Ginger - 1 Tsp

Ground Cloves - 1/4 Tsp

Salt - a pinch

Baking soda - 1/2 Tsp

Granulated sugar - 1 Tbsp

Softened butter - 1/8 Cup or 1/4 Stick

Oil - 1 1/2 Tbsp

Milk - 1 1/2 Tbsp

Honey - 2 Tbsp

Method :


1) Preheat oven to 350° F or 180° C.

2) In a bowl whisk butter nicely. Add sugar and beat well for 2 mins.

3) Add milk,honey and oil and mix well.



4) In another bowl take flour, soda, salt, cinnamon, ginger and cloves and mix well.

5) Add butter mixture into this, mix well. Refrigerate this mixture for 30 mins.



6) Make small balls of mixture, flatten them in palms approximately 1 inch circle and roll them in white sugar.


 
7) Keep on greased tray approx 2 inches apart and bake for 15-18 mins. Cool for 30 min and serve.

Eggless Chocolate Chip Muffins


Preparation Time - 10 Min                                    Cooking Time - 20 Min

This recipe makes 8 standard size muffins.

Ingredients :


All purpose flour - 1  Cup

Granulated Sugar - 1/4 Cup

Packed brown sugar - 3 tbsp

Chocolate chip - 1/2 Cup

Baking powder - 2 Tsp

Baking soda - a pinch

Salt - a pinch

Butter - 1/4 Cup or 1/2 Stick

Yogurt or Buttermilk - 1/4 Cup

Pure vanilla extract - 1/2 Tsp

Water - 2 Tbsp

Oil - 2 Tbsp


Method:


1) Preheat oven  to 375° F or 190° C.

2) In a bowl mix yogurt, oil,vanilla extract,water and melted butter, whisk it well.
    Tip: You can use milk instead of yogurt/buttermilk.


 
3) In another bowl mix all purpose flour, sugar, salt, baking powder and baking soda.
    Tip : If you sieve the dry mixture(except sugar) for 2-3 times ingredients mix together very well.
            Do not pack down the flour in measuring cup. First loosen your flour with a spoon and then fill in measuring cup.



4) Add chocolate chip to flour mixture and mix well and add milk mixture. Mix the ingredients lightly to a smooth batter.
    Tip : Do not over mix, muffins may become hard.

5) Put paper liners to muffin pan and put the batter. You can garnish with few chocolate chips.
     Tip: Fill only 1/2 or 3/4 of muffin cup with batter.



6) Bake in preheated oven for 16-20 mins or toothpick inserted in the center comes out clean.

7) Let it cool for 15 min and then serve.

Strawberry Muffins

Ingredients:


All Purpose flour - 1 1/4 Cup

Granulated sugar - 1/4 Cup + 1 Tbsp

Brown sugar - 1/4 Cup

Butter(unsalted) -  2 Tbsp (1/4 Stick)

Vanilla extract - 1/2 Tsp

Fresh strawberry cut in cubes - 3/4 Cup

Baking powder - 2 Tsp

Baking soda - a pinch

Milk - 1/2 Cup

Oil - 2 Tbsp

Salt - a pinch

Method:


1) Preheat oven  to 375° F or 190° C.

2) In a bowl mix milk, oil,vanilla extract and melted butter, whisk it well.

3) In another bowl mix all purpose flour, sugar, salt, baking powder and baking soda.
    Tip : If you sieve the dry mixture for 2-3 times ingredients mix together very well.

4) Add strawberries to flour mixture and mix well and add milk mixture. Mix the ingredients lightly to a smooth batter.

Wheat Flour Biscuits

Preparation Time - 10 Min                                   Cooking Time - 15 Min    

This recipe makes 24 biscuits.

Ingredients:


Wheat flour - 1 Cup

Butter - 1/8 Cup or 1/4 stick, softened at room temp

Powdered sugar - 1/4 Cup

Milk - 1/4 Cup or less 

Salt - 1/4 Tsp

Baking powder - 1 Tsp

Baking soda - 1/4 Tsp

Crushed cashew nuts or chocolate chip - 1/4 Cup (optional)

Method :


1) In a bowl mix together wheat flour, sugar, baking powder, and salt.

2) Preheat oven to 400° F or 200° C.

3) Add butter and cashew nuts(or chocolate chip) and mix well. 

4) Add milk as required and knead a soft dough.

5) Roll the dough flat into thickness of 1 cm.

6) With biscuit cutter or anything with sharp edges cut the biscuits.

7) Put on a greased sheet and bake in preheated oven for 15 mins or till cookies turn golden in color.



8) Let it cool for 30 mins and then serve.

Eggless Coffee Cookies

Preparation Time - 10 Min                         Cooking Time - 15 Min

Ingredients :


All purpose flour - 1 1/4 Cup

Butter - 1/2 Cup

Powdered sugar - 1/2 Cup 

Pure vanilla extract - 1/2 Tsp

Instant Coffee powder - 1/2 tbsp

Salt - 1/4 Tsp

Baking powder - 1/2 Tsp

Baking soda - 1/2 Tsp

Water - 2 Tsp

Vinegar - 1 Tsp

Method:


1) In a bowl take butter and beat it for 1 min.

2) Preheat oven to 350° F or 180° C.

3) Add powdered sugar and beat the mixture well for 2 mins.

4) In another bowl mix together all purpose flour, baking soda, baking powder and salt.

5) Add this flour mixture to butter and sugar mix.

6) Add vanilla extract, salt, vinegar, water and beat well for 2-3 mins.

7) Add coffee powder and mix well.





8) Make small balls of mixture and put on greased baking sheet. You can grease the sheet with oil, butter or pam spray.
    Try to make all balls of same size. You can use ice-cream scoop for that.




9) Bake for 14 mins and let it cool for 20 mins on wired rack and then serve.

Basic Eggless Cake/ Maida Cake

Preparation Time - 10 Min                     Cooking Time - 30 Min                          Serves - 6

Ingredients :


All purpose flour - 2 Cup

Sugar(Powdered) - 1 1/2  Cup

Butter -  1/4 Cup

Milk - 1 Cup

Baking Powder - 1 Tsp

Vanilla or your favorite essence - 1/2  Tsp

Method :


1) In a small pan heat butter and milk together till butter melts on low flame, stirring continuously.

2) In a bowl mix all purpose flour and sugar and add milk mixture in it.

3) Add baking powder and mix well until batter is smooth beating continuously. Add essence.

4) Preheat oven to 350° F or 175° C. Grease cake pan with a butter/ghee and add the batter to it.

5) Bake for 30 minutes. Cake is done when toothpick come out dry. Nice aroma will also come when it's done.

You can bake the cake in pressure cooker instead of oven but do not forget to remove the whistle.
Always bake the cake on low flame.
